Head chef application: RESIDENCE

The application process will be made up of three stages:

Stage 1: The initial online application to shortlist applicants.
Stage 2: Menu creation, costing and interview to determine the applicant's ability.
Stage 3: A final interview and contract offer.

Please provide an example of the following dishes, along with a brief description of the dish, process and components. The desired customer experience from each dish. ie: light, fresh and shareable or designed for individual consumption as a refreshing starter etc 1x bite size $10-$15
